This mushroom dry curry is one of those recipes that my mom used to make. the recipe used to be originally made with clams. Though, I make them with mushrooms. Thus this is a vegetarian version of the Goan tisryo masala. i have used button mushrooms for this recipe but you can also use portobello or cremini mushrooms.

The mushroom sabzi tastes very good and is slightly spicy. Apart from the spice and heat in the recipe coming from red chilies, there is also a slight sour taste which comes from kokam (garcinia indica). If you don’t have kokams then just add tamarind. (i have mentioned the method in the notes section of the recipe card and also in the step by step pics).

Onions are used twice in this mushroom recipe. first time onions are added in the ground spice paste. Second time onions are sauteed with mushrooms. This is a semi dry curry recipe.

This mushroom sabzi tastes good with chapati, rice and even toasted bread. Or you can serve mushrooms bhaji as a side dish with khichdi, pulao, dal-rice, sambar-rice or even as a quick meal with chapatis.

Preparing this restaurant style paneer mushroom recipe takes some time, but worth the effort. You can make it for special occasions or party or whenever you want to have rich curry dish.

You can serve mushroom paneer grvay with tandoori roti, phulka or naan or paratha or even pooris. It also goes well with a mildly spiced rice like jeera rice, matar pulao, ghee rice or saffron rice.

Preparation

1. Peel and then rinse 2 large onions (200 grams). Chop one onion and if required some portion of the second onion, in one inch squares. You will need about ¾ cup onion squares.

2. Finely chop the remaining onion. You will need ½ cup finely chopped onions. Also finely chop 2 medium to large tomatoes (150 grams) and 200 grams button mushrooms (about 2 to 2.5 cups chopped mushrooms).

3. Heat 3 tablespoons oil in a kadai or pan. Add the onions which have been cut in 1 inch squares.

Veggie based kurma is made at times at home. While we like to have korma with chapatis or pooris, I also serve it with steamed rice. Till now I have only posted the South Indian varieties of kurma. I do plan to add the North Indian varieties too.

The mushroom kurma recipe is adapted from the Mushroom peas curry, I had posted four years back. The mushroom peas curry recipe is adapted from jigg’s kalra book prashad – cooking with masters. From the first time I tried this recipe till today, on occasions I make this kurma with mushroom & peas and at times with potatoes & peas.

The recipe uses coconut and cashew as base ingredients. Try adding fresh coconut. It gives a very good flavor. If you live in a city where fresh coconut is not available, then use desiccated coconut.

This mildly flavored and yet delicious Mushroom kurma can be savored with chapatis, pooris with plain steamed rice. You won’t need any other accompaniment.

Mushroom caldin recipe with step by step photos – this is a vegetarian as well as vegan version of the popular Goan bright yellow curry generally made with fish.

Fish caldin as well as veg caldin is often served in the shacks and restaurants in goa. I once had a veg caldin at a beach shack and it was bad. No flavors, no balance and no taste…. Wondered who made it.

Mom makes fish as well as prawns caldin often at home. Being Goans, they are fish eaters, so fish is often served on the menu. I use my mom’s caldin recipe to make veg or mushroom caldin at home. my North Indian family loves this mushroom curry to the core. So much so that I often get requests to make this.

Here I have used coconut milk, both thin and thick milk. you can also use grated coconut and make the curry. To give a hint of sourness to the curry, we always add tamarind. In the absence of tamarind you can add vinegar or lime juice.

As this is a curry, it goes best with some steamed rice. Mushroom caldin curry also taste great with some soft bread or rolls. The bread soaks up the curry and its yummm when you eat a slice of bread and in no time you will end up finishing the curry as well as the bread. The curry can also be had with chapatis or Paratha.

I served mushroom caldin with garlic bread and steamed rice. Accompanying the curry you can also serve a side vegetable dish or a salad.

Even with veggies like cauliflower, peas, carrots, french beans etc the caldin curry tastes very good. So you can make this coconut based curry with veggies of your choice as well as mushrooms or mixed varieties of mushrooms.

Chilli mushroom is easy to prepare spicy and tasty Indian Chinese recipe. There are two versions of making chilli mushroom.

  • You can make dry chilli mushroom as a starter snack
  • You can make a curry version of chilli mushroom as a main course chinese meal.

Although both the versions can be had with roti or naan. But mostly the dry version is preferred as a starter snack.

Sharing one more Restaurant-style gravy of mushroom tikka masala. I had got a few requests to post this gravy recipe. this tikka masala gravy is different than the usual one I make with paneer or grilled veggies. Here I have not added fresh curd and used cashew paste. Thus the gravy is creamy and slightly sweet.

Preparing any tikka masala gravy takes time. so you can divide the prep work like marinating the tikkas a night before and then grilling & preparing gravy, the next day.

Mushroom tikka can be made both in the oven or on stovetop. i have listed both the methods in the step by step pics below. So choose one which suits you.

Serve mushroom tikka masala with tandoori roti, butter naan, lachedar paratha, chapati or phulka. The gravy also goes well with jeera rice, saffron rice or veg pulao.

Mushroom pepper fry recipe with step by step photos – spicy and tasty recipe of mushroom and capsicum pepper fry. Gluten-free and vegan. While touring last year in some parts of Kerala, we used to have amazing food. This mushroom pepper fry was one of the dishes we had in the taj hotels.

In the restaurant menu, it was known as mushroom varuval. they used to give papers printed with a daily activity list of the hotel along with one recipe every day, when they would refresh the room, during the housekeeping task. Initially, I did not see the recipe in the papers, but when I saw them, I started collecting the papers.

I had made a similar recipe with potatoes and mushrooms a couple of times last year. While shifting again, the papers got misplaced and I have still not got them. So remembering the recipes in the handouts, I tried this mushroom pepper fry. The taste came pretty close to the one we used to have in the hotel. There are many dishes that we had in Kerala that I want to prepare and add on the blog.

Black peppers are added to this dish along with some more spices. The pungency of black pepper is one of the highlights of this recipe. the aroma of fennel seeds are also felt. To give some color and crunch, I have added capsicum. Though you can give it a skip.

Mushroom pepper fry tastes best with chapatis or phulkas and even bread. You can also serve it as a side dish alongside sambar-rice or a plain yellow dal and rice.
